Nancy’s Stuffed Acorn Squash

Pre-heat oven to 350

Cut two acorn squash in half, baste with coconut oil on the inside and place on a baking sheet. Bake for about 40 minutes. 

Filling:

  • 1 small shallot diced
  • 1C leeks sliced or diced
  • 1/4 cup green onions 
  • 2 cloves of garlic finely sliced
  • 1/2 cup crickets and mealworms. Silk worms would be great also if you have them!

Add together:

  • 1/3 cup cooked quinoa
  • 1 cup cooked seasoned rice 
  • 1/2 cup prepared nutritional yeast 
  • 5 cherry tomatoes cut
  • 1 cup mushrooms
  • 1 piece seaweed (optional but a fun addition)
  • ½ teaspoon chili flakes
  • ½ teaspoon oregano
  • 3 tablespoons salsa 
  • 1 pinch Simply Curry
  • 1/2 cup pecans or walnuts (I have used macadamia nuts also)
  • 1/4 cup black olives diced or sliced 

Heat and combine the mix, then add to the squash. Cover each one individually and bake for 35 minutes. 

I have served this many times with salsa and without. I hope you will enjoy it!
