What Thanksgiving dinner would be complete without pumpkin pie! My mom (see sidebar for the rest of her recipes for our zoom Thanksgiving) sent me a bunch of recipes and this one might just – dare I say it – take the cake. Oof. I’ll see myself out, and you can get to making this amazing mealworm dessert!

Pumpkin Dessert with a New Buggy Twist

CRUST

Chop:

  • ½ cup each dates (remove pits), figs, (I like Mission), currents 
  • ½ cup melted coconut oil 
  • ½ cup mealworms (I like the Tocinebrios from Melbugs, but any mealworms suitable for human consumption will be good)
  • ½ cup walnuts chopped finely
  • ½ cup Cacao Nibs
  • Egg Replacer equal to one egg
  • 2 tablespoons coconut milk (keep the thick part on top)
  • Blend and add:
  •  ½ cup almond flour
  • ¼ c coconut flour
  • ¼ c tapioca flour

Mix well and chill. Once it has been chilled, remove from refrigerator and add ½ cup of fresh cranberry sauce, and mix with a wooden spoon.

Press in a pan greased with coconut oil (I used a 9×13 glass pan). Bake at 350 for 4 minutes or until slightly golden brown. Don’t over-bake it!

Remove from the oven and let it cool.

FILLING

In a bowl mix: 

  • 2 cups pumpkin puree (the times I made this I rendered my pumpkin but that is not necessary. It does give a more pumpkin flavor. If you use the canned puree that already has seasoning, omit the other spices below)
  • Egg Replacer equal to one egg (Two real eggs for the Entotarian version, slightly beaten)
  • 1 carton of your favorite cashew yogurt
  • 2 Tablespoons of pumpkin pie spice (omit if using canned pumpkin puree)
  • 2 tablespoons collagen powder
  • 1/4 c powdered Monk Fruit sweetener I use the organic one from Amazon Its sweet!
  • 1/4-1/2 cup corn starch easy dissolve

Whip until smooth and creamy (let it rest 15 minutes)

Add the pumpkin to the crust and bake for 65 minutes or until it comes clean on the knife (sometimes it takes longer).

The first time I made this I over-baked the crust. The second day it was fine.

It’s great to prepare a day ahead and refrigerate overnight.

The next time I watched it carefully, and wow, it was really good. Mealworms are the perfect insect to go with pumpkin pie!
