I got to speak at the Eating Insects Athens conference this year, which I was pretty excited about since I just missed the 2016 conference in Detroit, as it had happened right before I started really getting into entomophagy.

This event has been a great opportunity for me to get to know people in the industry, some of whom I’ve talked to online but others of whom I have simply followed from afar. Always fun putting faces with emails and instagram accounts!

More than anything it’s been fascinating to hear the ideas, questions, and suggestions that so many people passionate about insects as food and feed have related to the vegan and vegetarian demographic, of which I’m part and continue to learn more about peoples’ unique individual perspectives every day.
